Swordfish Shish Kebabs with a green chimichurri sauce




For the fish:

  1. Cut the Swordfish in square pieces

  2. Cut your selection of preferred veggies

The best choices are to mix pieces of onions with all three colors of bell peppers. If you have bacon, you can pile some in as well.


For the chimichurri sauce:

  1. Place 1/2 a cup of olive oil

  2. 1/4 cup of lemon juice

  3. 1 garlic

  4. Half an avocado

  5. Chives, parsley and any other green spice of your preference.

Blend well and use for serving or as a side sauce. The best way to cook this dish is in a sauce pan, but its great for the barbecue as well.
